:) It’s finally autumn! I’ve eagerly been awaiting this part of the year for some time: to open the windows, drink tea and hot chocolate, cozy under the covers, celebrate my birthday and Thanksgiving (my favorite holidays) and make scrumptious cold weather foods.
The majority of the month we’ve already left the windows ajar, closing them only during parts of the day when the sun’s heat blazes. And we’ve sipped a few hot beverages when Cobalt and I caught the inevitable cold virus a couple of weeks ago; but not too often yet because the exterior temperature hasn’t dropped below 50F. Nonetheless, I’d soon like to mix up my mother’s homemade hot chocolate mix (which beats ANY store brand by a mile! Recipe to come, soon.) to enjoy on brisk mornings to work and school.
Despite the mild temperatures, we’ve snuggled in blankets on and off, especially when leaving the windows open during the night; in fact, I almost wrapped a thin blanket over me whilst typing this post (it’s past sunset now). But otherwise, a few more weeks into this season are needed to bring on the chills.
Last but not least, I look forward to November to celebrate my 23rd birthday (hopefully with my new-found friends here!) and Thanksgiving (with family and delicious food). And on that note, I am excited to begin cooking cold-weather foods like soups, and casseroles; which I will most likely be writing about in successive posts. :)

Speaking of fall foods, cobbler is one of my favorite fall desserts! While cobbler can definitely be made year-round with the fruits that are in season, I consider it to be more a cold-weather treat because I mostly enjoy eating it warm.
Yesterday, I wanted to make a dessert but something that wouldn’t last too long so that Cobalt and I could refrain from eating too much of it; and something remotely healthy since my goal in life is to make every food we eat as healthy as possible (and still tasty).
I have yet to buy cocoa powder or chocolate (for the very reason of restraining from baking) but remembering the frozen fruit Cobalt and I just bought at Aldi, I decided upon blueberry cobbler.
The last few batches of cobbler/pie I’ve made I’ve used an oatmeal crumb or crust topping. But this time I wanted to try a streusel topping, instead. Here’s the recipe I made up below. If you like it, feel free to replace the blueberries with your favorite fruit; or streusel topping with pie crust instead! :)
P.S. I apologize. I didn’t actually measure the ingredients when making this cobbler; therefore, the measurements listed below are guestimates of the actual amounts used!
Blueberry Cobbler for Two
- cooking spray
- 1 lbs blueberries, frozen
- 3/4 cup brown sugar (not packed)
- 1 TBS cinnamon
- 1/2 cup flour
- 3 TBS butter, melted
- Preheat oven (I used a toaster oven) to 350F
- Spray ceramic bowl with cooking spray
- In a separate bowl, pour blueberries and half of the sugar and cinnamon
- Microwave (or heat on stove) blueberries for 3 minutes, until soft but not necessarily hot
- Pour blueberries in ceramic bowl
- In a clean bowl, mix flour, butter and the rest of the sugar (i.e. 1/4 cup). The texture should resemble crumbles, so if it’s too wet, add more flour in 1 TBS increments. If too dry, add 1 tsp of water in increments.
- Pour the streusel mixture over the blueberries
- Bake for 30 minutes, until blueberries are bubbly and streusel topping is golden brown
- Let cool slightly (or more if you prefer it cold). Serve with icecream or by itself.
It’s hard to see in the picture, but the blueberries actually lava-ed over the streusel topping, creating an exceptional, blueberry-flavored 1/2-inch crunchy crust on the top! It was — wow — so delicious! Probably the best cobbler I’ve ever made. Regrettably, Cobalt and I shared the entire bowl for supper :)
